Low Carb Pizza Chicken


4 boneless skinless chicken breasts
1 egg -- beaten
1/2 C grated parmesan cheese
2 T Italian herbs
4 slices provolone cheese
1 tsp. butter


  1. Preheat oven to 425F.
  2. Place each chicken breast between 2 pieces of plastic wrap or waxed paper and pound with a mallet or side of a rolling pin to flatten slightly.
  3. Mix Parmesan with the herbs.
  4. Dip flattened chicken in beaten egg then roll in Parmesan/herb mixture to coat. Place coated chicken pieces in a greased 9x13 baking dish. Dot with butter and bake for 20-25 minutes or until done. Place slices of provolone cheese over each breast during last 2-3 minutes of baking so cheese will melt.
