Chinese Stir-fry Beef With Green Beans
1/2 pound flank steak, sliced into 1/4-inch thick, 2-inch long slices
2 Tablespoons soy sauce
1 teaspoon dry sherry
1/2 Tablespoon cornstarch
1 teaspoon sugar
1 pound fresh green beans
4 Tablespoons cooking oil
1 teaspoon salt
1/4 teaspoon MSG (can be left out)
- Mix steak with soy sauce, sherry, cornstarch, and sugar. Set
- aside. Remove stems and strings from green beans and break
- beans into 2 or 3 sections. Wash and drain well. Put 2
- Tablespoons oil in a hot skillet, high heat, add beef mix and stir constantly for 1 minute.
- Remove to a bowl. Add rest of oil to skillet; stir beans into skillet, add 1/2 cup water and bring to a boil. Cook over medium heat, covered, for 10 minutes, stirring occasionally. If liquid is about to cook away, add 1/4 cup more water.
- Add salt, MSG and beef to beans. Mix well, serve when beef is warmed.
