Butterscotch Yams


Makes 6 servings


6 medium yams, cooked, peeled and quartered OR 2 cans (17 ounces each) yams, well drained
1/2 cup light (or dark) corn syrup
1/2 cup firmly packed brown sugar
1/4 cup heavy cream or half-and-half
2 Tablespoons butter
1/2 teaspoon salt
1/2 teaspoon cinnamon


  1. Arrange yams in a single layer in 13x9x2-inch baking dish. Bake for 15 minutes in a 325 degree F. oven.
  2. In a heavy 2-quart saucepan combine the remaining ingredients. Stirring constantly, bring to boil over medium heat and boil 5 minutes. Pour over yams. Bake, basting frequently, 15 minutes longer or until glazed.
